Seafood Sensation

This is one of my favorite fish recipes. It's my only fish recipe... Otherwise it is fish sticks...

It is easy and delicious! And there is an amazing amount of flavor.
There, of course, is fish a white flaky fish works best (I usually get Filet of Sole), crab or lobster (imitation is fine - I usually use it), and baby shrimp. I baste the fish first with a lemon butter sauce.

I usually eyeball the ingredients so I don't really have precise measurements - it's basically when it tastes good. You'll see what I mean...


Here is what you need:
2 servings


- Filet of Sole
- Lobster or Crab ( chopped into smaller chunks)
- Baby Shrimp
- Extra Virgin Olive Oil
- Butter
- Lemon
- Roasted Red Pepper and Garlic Seasoning
- Dill weed
- Salt and Pepper to taste


In a container add approx 2 tablespoons Extra Virgin Olive Oil, add 2 tablespoons of butter, mix together.
Add Seasoning, Salt, Pepper, Dill weed, lemon zest and lemon juice to taste.
You want to make sure one flavor does not over power the other.



Make sheets out of aluminium foil. The fish is going to be wrapped in the foil.


Place fish on foil, baste both side with lemon butter sauce.


Place Lobster or crab chunks on top of the fish, drizzle sauce over the Lobster/ Crab.



Place the baby shrimp on top of the Lobster/ Crab. Drizzle with sauce.



Slice lemon and place 2 slices on top of the fish.


Fold the foil around the fish like a pocket.

Cook in 400 degrees oven for about 30 minutes.

I find cooking the fish in foil pockets steams the fish and flavors all of the food.

Remove lemon slices. Serve alone or on top of rice.


The fish is really flaky, I usually use tongs and scoop up all of the fish and I will pour the sauce at the bottom of foil on top of fish and rice.
